Frittata


This is a recipe that my good friend Celestina Gonçalves, the mother of my goddaughter taught me.


You can basically use the ingredients you like and then mix it all up with the eggs and the cheese on top.


I believe eating meat is wrong but if you´re ok with it, you can add chicken, sausages, chorizo or tuna, shrimp, for example.


I used vegetables and it turned out absolutely delicious and cruelty free!


Ingredients:

  • olive oil

  • salt

  • onion

  • garlic

  • laurel

  • ground pepper

  • 200g leek

  • 200g spinach

  • 200g carrots

  • 200g grated mozzarella cheese

  • 200g mushrooms

  • 6 eggs



Preheat oven to 200 ° C.


In a non-stick frying pan that can be put in the oven, sauté in olive oil and medium heat, some onion, garlic and laurel.


Add the leek, the spinach, the mushrooms and the carrots, season with salt and pepper and allow to braise, until the vegetables are cooked, stirring from time to time.


In a bowl, beat the eggs with a fork, add a little milk and season with salt and pepper. Add to the mixture of vegetables.


Let the bottom of the frittata coagulate for 3 to 4 minutes.


Remove from the stove, sprinkle with the grated cheese and bring the frying pan to the oven for about 10/12 minutes, to finish cooking.
