
I appreciate all kind of cheese and mascarpone is no exception. I realized that it´s an ingredient you can use to make delicious cakes and pies, just like this one I tried last week.
Here´s the original recipe:
Ingredients:
1 base of puff pastry
200 g of mascarpone
5 eggs
180 gr sugar
juice of half a lemon and zest of one lemon
Beat the mascarpone with the sugar, the yolks, the zest and the lemon juice.
Whisk the egg whites until they are firm and add to the mascarpone mixture wrapping carefully.
Place the puff pastry in a pie form and pour the mascarpone preparation. It goes to the oven at 180º C for 30 to 40 minutes.
When it´s cold, sprinkle with powdered sugar. I added caramelized peanuts to my pie and it worked very well.
