
I had a lot of lemons so I tried to make something to utilize them.
I found this recipe and decided to try it:
Ingredients:
1 puff pastry roll
2 cans of condensed milk
150 g sugar
2 lemons (about 2 deciliters)
5 eggs
3 gems
Line a pie form with the puff pastry, trim the edges and chop the bottom with a fork. Reserve.
In a bowl, mix lemon juice well with 8 egg yolks and condensed milk. Pour in the mix and bake in preheated oven at 180º C, for 35 minutes. Remove from oven, unmold and allow to cool.
Apart, beat the 5 egg whites with the sugar until it becomes firm. Arrange over the pie filling and bake until the meringue turns brownish. Remove, let it cool and serve fresh.
